St. Regis Bali Hotel Experience: Restaurant Part 1 | Dulang Dinner for an Authentic Balinese Experience

In my previous article, I introduced the hospitality and comfortable space I felt during my repeat stays at The St. Regis Bali Resort .
This time, as a sequel, I will write about dinner at Dulang , a restaurant that was one of the most memorable dining experiences.

Rather than focusing on glamour, it is a time to experience the local culture and daily life of Bali in a quiet setting.
We'll look back on the charm of Dulang, a dish that we were able to rediscover thanks to our return visit.

A quiet gazebo restaurant that blends into the Balinese night

Dulang is a relaxed restaurant with seating in a carved gazebo.
The store's name comes from "Duran," a round wooden tray that was once used on the dining tables of royalty.

There aren't many seats and the lighting is subdued.
The space, where the night breeze blows through and the sounds of nature quietly reach the ears, is a world apart from bustling resort dining.
Rather than "eating," it would be more accurate to say that you are "immersed in Balinese time" here.

1|Fresh sambal signals the start of the meal

The first thing that is brought out is a platter of fresh sambal.
The freshness of the ingredients, such as onions, chili peppers, and tomatoes, stands out, and you can really taste not only the spiciness but also the aroma and umami.

This one dish naturally conveys that tonight's course is "based on Indonesian home cooking."

2|The nutritious soup will relax your body

The soup that follows is a simple bowl with a gentle saltiness and the delicious flavor of the dashi stock.
It's not flashy, but it has a nostalgic feel and a taste that is easy on the body.

Even though I was traveling, it was a presence that brought me back to a sense of calm.

3|A large tray of main dishes, recreating a Balinese dining table

The main course is a round wooden tray filled with small portions of fish, meat and vegetable dishes.
Rather than being served one dish at a time, Dulang's unique style is that the food is presented in a way that recreates the dining table of Bali .

There was a wide range of flavors and aromas, and it was a fun time deciding which one to reach for first.

4 | Carefully prepared lobster dishes

The most memorable thing was the lobster.
The use of light herbs brings out the sweetness of the ingredients.

It had a strong flavor without feeling heavy, and blended naturally into the flow of the course.

5|Satay with the savory aroma of charcoal

The beef and chicken satay has an exquisite balance of charcoal aroma and spices.
The beef is especially tender, with delicious flavors spreading with every bite.

The heat level is consistent, making it a dish you can enjoy with confidence every time.

6. A simple yet playful dessert

The desserts are visually appealing while retaining the warmth of a homemade dish.
It was combined with sweet flavours typical of Bali, such as coconut and ice cream, and was just the right lightness to end the course.

Dulang What is the appeal of this restaurant?

The limited number of seats creates a comfortable tranquility

Although it is open air, it is not noisy at all.
The lighting is subdued, allowing the sounds of conversation and nature to resonate comfortably.

It is not a restaurant that caters to a large number of people,
The impression that this is a place where time passes slowly remains strong.

Balinese dance and music to accompany your meal

As the night deepens, the dance begins accompanied by the sounds of the gamelan (Rindik).
It's not a flashy show, but rather a quiet production that is merely an extension of the meal.

It blended in naturally without interfering with the flow of the food or the space.

Summary | A Quiet Balinese Night at Dulang

Dulang is not a luxury dining venue.
This is a place where you can enjoy a meal while gently experiencing Balinese culture and daily life.

On my second visit, the impression remained the same, and in fact it seemed to have deepened.
It's not flashy, but it will quietly remain in your memory during your stay.
Dulang is such a restaurant.
